Lightly toast the green cardamom pods and black cardamom pods separately in a dry skillet over medium heat for 1–2 minutes until fragrant. Shake the pan constantly to avoid burning. Remove from heat and let cool.

Crack open the cooled green cardamom pods with the flat side of a knife or a mortar & pestle and remove the small dark seeds. For black cardamom, remove seeds if using the smoky flavor is desired; otherwise reserve whole for long infusions.

Making Fresh Ground Cardamom

Place the removed seeds in a spice grinder or mortar & pestle. Grind to a fine powder (about 20–30 seconds in a grinder). Sift the ground seeds through a fine mesh sieve to remove larger husk fragments. Yield should be approximately 1 tsp of fresh ground cardamom from 1 tbs pods.

Using Pre-ground Cardamom

If using pre-ground cardamom (1 tsp), add directly to batters, doughs, or spice blends. Because pre-ground loses aroma faster, adjust quantity to taste; fresh-ground is more aromatic.

Quick Cardamom Tea (Chai-style, makes 2 cups)

Bring 2 cups water and 1 cup milk (optional) to a simmer in a small saucepan. Add toasted green cardamom seeds (from Whole Spice Prep) and the 3 black cardamom pods (if using for smoky depth). Add 1 tsp sugar or sweetener if desired. Simmer gently for 4–6 minutes to infuse. Strain through a fine mesh sieve into cups and serve hot.

Infusing for Baking or Sauces

To infuse liquid (milk, cream, or syrup), warm the liquid with toasted pods or 1 tsp fresh-ground cardamom over low heat for 10–15 minutes without boiling. Strain out solids through a fine mesh sieve and use the infused liquid in custards, syrups, or sauces.

Store unused whole pods or ground cardamom in an airtight jar in a cool, dark place. Whole pods keep aroma longest (several months); freshly ground cardamom is best used within 2–3 weeks for maximum fragrance.

When substituting between forms: 1 tablespoon whole green cardamom pods (seeds removed and ground) ≈ 1 teaspoon ground cardamom. Adjust to taste because cardamom is intensely aromatic and resinous.
