Method

Preparing Clarified Milk

  1. 1

    Combine Ingredients

In a large bowl, combine 2 cups of whole milk, 1 cup of granulated sugar, and 1 cup of lemon juice. Stir well until the sugar is dissolved.

  2. 2

    Let it Sit

Allow the mixture to sit at room temperature for about 30 minutes. This will help the milk curdle.

  3. 3

    Strain the Mixture

After 30 minutes, strain the curdled mixture through a fine-mesh sieve or cheesecloth into another bowl, discarding the solids. This will give you clarified milk.

Mixing the Drink

  1. 4

    Combine Liquors

In a large pitcher, combine 1 cup of Korbel brandy and 3 cups of Edward's apple cider.

  2. 5

    Add Bitters

Add 2 dashes of Angostura bitters to the mixture and stir gently.

  3. 6

    Incorporate Clarified Milk

Slowly pour the clarified milk into the pitcher, stirring continuously to combine all ingredients evenly.

Serving

  1. 7

    Chill and Serve

Chill the Sconnie Cider in the refrigerator for at least one hour before serving. Serve over ice in a glass, garnished with an apple slice if desired.
