Method

Prepare the Base

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. Mix well to ensure even distribution.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the eggs, milk, and melted butter until fully combined.

  3. 3

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Prepare the Yellow Layer

  1. 4

    Sauté Aromatics

In a skillet, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until the onion becomes translucent.

  2. 5

    Add Yellow Squash

Stir in the grated yellow squash and black pepper. Cook for about 5 minutes, until the squash is tender. Remove from heat and let cool slightly.

  3. 6

    Combine with Cheese

In a mixing bowl, combine the sautéed yellow squash mixture with the shredded cheddar cheese. Mix well.

Assemble and Bake

  1. 7

    Layer the Mixture

Preheat your oven to 350°F (175°C). In a greased baking dish, spread half of the base mixture evenly. Then, layer the yellow squash and cheese mixture on top, followed by the remaining base mixture.

  2. 8

    Bake

Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

  3. 9

    Cool and Serve

Allow the dish to cool for about 10 minutes before serving. Top each serving with sour cream and chopped chives.
