Cocktail Base

Lemongrass Vodka Infusion (makes ~12 oz; use 2 oz per cocktail)

Method

Lemongrass Vodka Infusion (advance, 24–48 hours)

    Prepare infusion

    Bruise the lemongrass stalks by lightly smashing with the back of a knife, then chop into 1–2 inch lengths. Place the chopped lemongrass in a clean jar and pour 12 oz neutral vodka over it. Seal and let infuse at room temperature for 24 hours, then taste. If flavor is bright and present, strain; if too mild, steep up to 48 hours total.

    When the infusion reaches desired lemongrass intensity, strain through a fine mesh sieve lined with cheesecloth into a clean bottle. Refrigerate. Use 2 oz per cocktail; leftover infused vodka keeps refrigerated for up to 2 weeks.

Cocktail Assembly

    Chill a tall Collins glass or a 12–14 oz highball glass in the freezer for 5–10 minutes, or fill with ice while preparing ingredients.

    Build the cocktail

    In a cocktail shaker, add 2 oz lemongrass-infused vodka, 0.5 oz white rum, 1 oz passionfruit purée, 1 oz green apple juice, 0.5 oz agave syrup and 0.5 oz fresh lime juice.

    Dry shake (optional)

    If your passionfruit purée is thick or you want a silkier texture, dry shake (no ice) vigorously for 10 seconds to integrate ingredients.

    Shake with ice

    Add plenty of ice to the shaker and shake vigorously for 8–12 seconds until well chilled (shake until the exterior frosts).

    Prepare glass

    Discard any ice used to chill the glass. Fill the chilled Collins/highball glass three-quarters full with pebble (crushed) ice.

    Strain

    Double-strain the cocktail from the shaker over the pebble ice using a fine mesh strainer to remove pulp and ice shards, allowing the cocktail to settle on the pebble bed.

    Top with sparkling wine

    Gently float or slowly pour 2 oz chilled sparkling wine down the side of the glass so it layers and adds effervescence without flattening the cocktail.

    Garnish & finishing touch

    Place a lemongrass stalk upright (or angled) and a thin apple slice on the rim or laid against the inside of the glass. Just before serving, sprinkle 1 tsp popping candy onto the surface of the drink so it reacts with the bubbles and creates a playful crackling effect.

    Serve immediately with a reusable straw. Inform the guest the popping candy will fizz and crackle for a few seconds; do not cover the glass until the candy settles.
