Prepare wrappers
Separate wonton wrappers into individual squares. If using large or thicker wrappers, cut each square into quarters for smaller, crispier chips (optional). Pat wrappers dry with a clean kitchen towel if they feel damp.

Heat oil
Pour neutral oil into a heavy-bottomed skillet or medium saucepan to a depth of about 1 to 1.5 inches (roughly 2.5–4 cm). Heat oil over medium-high until it reaches 350°F (175°C) on a candy/deep-fry thermometer. If you don't have a thermometer, test by dropping one wrapper: it should sizzle and rise immediately without browning in more than 5–7 seconds.

Fry in batches
Working in small batches (6–8 wrappers at a time depending on pan size), gently slide wrappers into the hot oil using tongs. They will puff and bubble. Stir gently with a slotted spoon or tongs to keep them separated and to promote even browning. Fry for about 30–60 seconds, flipping if necessary, until edges are golden and the chips are crisp. Avoid overcrowding to maintain oil temperature.

Drain and season
Using a slotted spoon or spider, transfer fried wonton chips to a paper-towel-lined baking sheet or wire rack set over a sheet pan to drain. While still hot, sprinkle evenly with fine sea salt (about 1 teaspoon total), and if using, dust with the optional sugar and/or white pepper to taste. Allow to cool for 2–3 minutes — chips will crisp further as they cool.

Repeat until done
Continue frying remaining wrappers in batches, reheating oil to 350°F between batches if necessary. Monitor oil temperature and adjust heat to keep it steady. When finished, let oil cool and discard or strain and store for another use.

Transfer chips to a serving bowl or platter. Serve warm or at room temperature with lime wedges if desired. Chips are best eaten the same day for maximum crispness.
Dipping (optional)

Make the dipping sauce by whisking together soy sauce, rice vinegar, honey (or sugar), sesame oil, and chili crisp (if using) in a small bowl until combined. Taste and adjust balance — add more honey for sweetness or more vinegar for tang.
