Cocktail

Sencha Green Tea (makes extra; you will use 0.75 oz)

Method

Sencha Green Tea (prepare first)

    Brew

    Heat water to about 170°F (75°C). Add 1 tsp sencha leaves to a small teapot or infuser and steep for 1–1.5 minutes to produce a bright, vegetal concentrate. Do not oversteep to avoid bitterness.

    Cool

    Strain the tea into a small container and chill briefly until it reaches room temperature or is slightly cool. You will use 0.75 oz in the cocktail; reserve the rest for another use or for a second drink.

Assemble Forgotten Blossom

    Prepare glass

    Place one large clear ice cube or ice sphere into a chilled double old-fashioned or rocks glass.

    Mix cocktail

    In a mixing glass filled with ice, combine 1.5 oz pisco, 0.5 oz Salers Aperitif, 0.5 oz lychee liqueur, 0.5 oz Cap Corse Blanc, 0.75 oz cooled sencha green tea, 0.25 oz fresh lime juice, and 0.25 oz simple syrup.

    Stir and dilute

    Stir the mixture with a bar spoon for 20–30 seconds until well chilled and properly diluted (about 20% dilution is typical for spirit-forward stirred drinks).

    Strain and serve

    Double-strain (fine mesh is optional) the cocktail over the prepared large ice in the glass.

    Garnish

    Skewer a lychee candy (or a drained canned lychee) on a cocktail pick and rest it across the rim or place it atop the ice. Serve immediately.
