Base & Non-Alcoholic Spirits

    Measure 3 tsp non-alcoholic whiskey and 1 tsp non-alcoholic bittersweet liqueur into a mixing glass or shaker. These provide the drink's backbone and bittersweet depth.

    Add 1 dash non-alcoholic bitters to the spirit mix if you want extra aromatic complexity; stir gently to combine.

Vegetable Juices & Cordials

    Add 2 tbsp fresh rainbow carrot juice and 1 tbsp fresh beet juice to the mixing glass. Use freshly pressed juices for brightness; if using pre-bottled, shake/stir well before measuring.

    If you don't have a juicer: grate carrots and beets finely, wrap in cheesecloth and press to extract the juice. Strain through a fine-mesh sieve to remove fibrous bits.

Citrus & Acid

    Acid adjustment note

    Acid-adjusted grapefruit means grapefruit juice balanced for acidity (commercially adjusted juice or add a small pinch of kosher salt if grapefruit tastes too flat). Use 1 tbsp of this adjusted grapefruit juice and 1 tsp fresh lemon juice into the mixing glass.

    After adding citrus, taste briefly: the grapefruit provides tartness and aromatic oils; lemon brightens and lifts the vegetal juices.

Spice & Aromatics

    Add 1 tsp fresh ginger juice (or about 1/2 tsp grated ginger squeezed through a small strainer/cheesecloth). Ginger should be assertive but not overwhelming; adjust by small increments.

Sweetener & Balance

    Add 1 tsp simple syrup and, if desired for extra roundness, 1/2 tsp honey syrup. Stir or shake and then taste. The goal is a balanced interplay between bitter, earthy, tart, and sweet.

    If the drink tastes too bitter or vegetal, add another 1/2 tsp simple syrup. If it is too sweet, add an extra 1/4 tsp lemon juice.

Combine & Chill

    Fill a rocks glass with a large ice cube. Add the combined non-alcoholic mixture to a shaker with ice, or stir in the mixing glass with ice for about 20 seconds until well chilled and slightly diluted.

    Strain the chilled mixture over the large ice cube in the serving glass using a fine strainer to remove any pulp or ice shards.

Garnish & Serve

    Garnish with a thin ribbon or wheel of rainbow carrot laid on the surface and a small sprig of microgreens or herb for an earthy visual. If you used optional non-alcoholic bitters on top, add one small aromatic dash over the finished drink.

    Serve immediately. Encourage the drinker to nose the carrot ribbon/herb before sipping to capture the vegetal aromatics that complement the non-alcoholic whiskey base.
