Method
Cajun chicken seasoning & cooking
Prepare seasoning
In a small bowl combine paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, kosher salt and black pepper; mix well.
Season chicken
Pat the chicken breasts dry with paper towels. Rub 1 tablespoon olive oil over the chicken, then evenly coat both sides with the Cajun seasoning mixture.
Cook chicken
Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. When hot, add the seasoned chicken breasts. Cook 5-7 minutes per side (depending on thickness) until the exterior is nicely seared and internal temperature reaches 165°F (74°C). Reduce heat slightly if exterior is browning too quickly. Remove chicken to a cutting board and let rest 5 minutes, then slice or cube into bite-sized pieces.
Caesar dressing (homemade)
In a medium bowl whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste and minced garlic until smooth. Stir in freshly grated Parmesan. If the dressing is too thick, whisk in water, 1 teaspoon at a time, until desired consistency (target: pourable but clingy). Taste and adjust seasoning with salt and black pepper. Chill in refrigerator while finishing the rest of the salad to meld flavors (minimum 10 minutes).
Salad - greens & assembly
Prepare greens and toppings
Wash and thoroughly dry the romaine lettuce. Tear or chop into bite-sized pieces and place in a large salad bowl. Add halved cherry tomatoes, grated/shaved Parmesan and croutons.
Assemble salad
Add the sliced Cajun chicken to the bowl with the greens and toppings. Drizzle 3/4 of the Caesar dressing over the salad (reserve some for individuals). Toss gently but thoroughly to coat leaves and chicken. Taste and add more dressing if needed. Sprinkle additional Parmesan and extra croutons if desired.
Serve
Divide the salad among plates or serve family-style. Offer remaining dressing on the side. Serve immediately so croutons remain crisp.
