Prepare bread and cheese
Lay out 4 slices of bread on a clean surface. Place 1 cheese slice on two of the bread slices. If using mild cheddar, fold or tear to cover the bread evenly.
Assemble sandwiches
Top each cheese-covered slice with the remaining bread slices to form two sandwiches, pressing gently at the edges to seal.
Butter the bread
Spread about 1/2 tablespoon of butter evenly on the outside face of each sandwich (total 1 tablespoon). For easier spreading, soften the butter at room temperature or gently warm it.
Flip and finish
Carefully flip each sandwich with a spatula. Butter the new top side lightly if needed. Continue cooking another 2–3 minutes until the second side is golden and the cheese inside is fully melted. If cheese isn't melting, reduce heat slightly and cover the pan for 30–60 seconds to trap heat.
Rest and cut
Remove sandwiches from the pan and transfer to a cutting board. Let rest 1 minute (this prevents hot cheese from spilling). Cut each sandwich in half diagonally or into strips for kids.
Optional add-ins
Add tomato or ham
If using tomato slices or ham, place them on top of the cheese before closing the sandwich. For tomato, pat dry with a paper towel to avoid soggy bread. For ham, use pre-cooked deli or leftover ham; one or two thin slices per sandwich are sufficient.
Add mustard
If using mustard, spread 1/2 teaspoon on the inside of one slice of bread before adding cheese to give a mild tang that’s kid-friendly.
