Prepare the Maple Syrup Mixture
In a medium saucepan, combine the maple syrup and water. Heat gently over medium heat until the mixture is warm and well combined, stirring occasionally.
Add the Spices and Aromatics
Once the maple syrup mixture is warm, add the vanilla bean (split and scraped), cinnamon stick, nutmeg, cloves, orange zest, and lemon zest. Stir well to combine all the flavors.
Simmer the Mixture
Reduce the heat to low and allow the mixture to simmer for about 10 minutes. This will help infuse the flavors into the syrup.
Combine with Monastrell Wine
After simmering, remove the saucepan from heat and let it cool slightly. Once cooled, stir in the Monastrell wine until fully combined.
Add Alcohol
After mixing in the wine, add the high proof vodka or neutral spirit to the mixture. Stir well to incorporate.
Bottle and Infuse
Transfer the mixture to a clean bottle or jar with a tight-fitting lid. Seal the bottle and let it infuse for at least 3 days in a cool, dark place. For a stronger flavor, let it sit for up to 2 weeks.
Strain and Serve
After the infusion period, strain the liqueur through a fine mesh sieve or cheesecloth to remove the solid spices and zest. Store in a clean bottle and serve over ice or use in cocktails.
