Cake Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a double boiler or in the microwave in 30-second increments until smooth. Set aside to cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and eggs until well combined and slightly frothy.

Combine Mixtures
Add the melted chocolate mixture and vanilla extract to the egg mixture. Stir gently until fully incorporated.

Add Dry Ingredients
Sift in the salt and mix until just combined. Be careful not to overmix.

Bake the Cake
Pour the batter into a greased and lined 8-inch round cake pan. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Cool the Cake
Remove from the oven, let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Filling
In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and continue mixing until well combined.

Add Cream and Vanilla
Slowly add the heavy cream and vanilla extract to the cream cheese mixture, beating until smooth and creamy.

Fill the Cake
Once the cake is completely cooled, carefully cut it in half horizontally. Spread the vanilla filling evenly over the bottom half, then place the top half back on.
Chocolate Ganache Preparation

Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Make Ganache
Remove the saucepan from heat and add the dark chocolate. Let it sit for a minute, then stir until the chocolate is fully melted and the ganache is smooth.

Dip the Cake
Allow the ganache to cool slightly, then pour it over the filled cake, letting it drip down the sides for a beautiful finish.

Let the ganache set for about 30 minutes at room temperature before slicing and serving.
