Steak Marinade

Prepare the Marinade
In a large bowl, whisk together the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, salt, and black pepper.

Marinate the Beef
Add the carne asada beef to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Pico de Gallo

Combine Ingredients
In a medium bowl, mix together the diced tomatoes, red onion, chopped cilantro, minced jalapeño, and lime juice.

Season to Taste
Taste the pico de gallo and adjust seasoning with salt or extra lime juice if needed. Set aside to let flavors meld.
Chipotle Aioli

Mix the Aioli
In a small bowl, combine the mayonnaise, minced chipotle peppers, lime juice, and garlic powder. Stir until smooth and well mixed.

Adjust Flavor
Taste and add additional chipotle peppers or lime juice if desired. Cover and refrigerate until ready to serve.
Cooking the Steak and Assembling Tacos

Rest and Slice
Remove the cooked steak from the heat and let it rest for 5 minutes. Slice against the grain into thin strips.

Assemble the Tacos
Warm the flour tortillas in a skillet or microwave. Layer the sliced steak on each tortilla, followed by pico de gallo and a drizzle of chipotle aioli. Garnish with fresh cilantro.
