Pulled Pork Preparation

    Prepare the Pork

    Trim excess fat from the pork shoulder and cut it into large chunks.

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Season the Pork

    Add the pork chunks to the skillet. Sprinkle with cumin, paprika, salt, and black pepper. Sear the pork on all sides until browned, about 5-7 minutes.

    Slow Cook

    Transfer the pork and sautéed vegetables to a slow cooker. Pour in the barbecue sauce. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork back with the sauce in the slow cooker.

Quesadilla Assembly

    Prepare the Quesadilla

    Heat a non-stick skillet over medium heat. Place one tortilla in the skillet.

    Add Cheese and Pork

    Sprinkle a generous amount of shredded cheese on half of the tortilla, followed by a layer of pulled pork. Top with chopped green onions.

    Fold and Cook

    Fold the tortilla in half and press down gently. Cook for 2-3 minutes until the bottom is golden brown. Flip and cook for another 2-3 minutes until the other side is golden and cheese is melted.

    Serve

    Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream and salsa.
