Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes, or until frothy.

Mix the Ingredients
Add flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until smooth.

Let the Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Bites
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into small pieces, rolling each into a ball.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Add the baking soda carefully.

Boil the Bites
Boil the pretzel bites in batches for about 30 seconds each, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

In a medium saucepan over low heat, combine cream cheese and beer, stirring until smooth.

Gradually add shredded cheddar cheese, garlic powder, onion powder, and hot sauce, stirring until the cheese is melted and the mixture is well combined.

Add black pepper to taste, mixing well. Keep the cheese sauce warm on low heat until ready to serve.
