    Prepare the potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This removes excess starch, helping them become crispy when cooked.

Cooking

    Heat the oil

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the potatoes

    After the potatoes have soaked, drain them and pat them dry with paper towels to remove excess water.

    Fry the potatoes

    Carefully add a handful of dried potato strips into the hot oil. Fry them in batches for about 5-7 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.

    Drain and season

    Once cooked, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, garlic powder, and black pepper.

Serving

    Serve the fries

    Serve the crispy fries immediately while hot. Optionally, sprinkle with grated Parmesan cheese and serve with ketchup or ranch dressing on the side.
