Marinate the Chicken
Prepare the Marinade
In a large bowl, combine olive oil, balsamic vinegar, Italian seasoning, garlic powder, salt, and black pepper. Whisk together until well blended.
Marinate the Chicken
Add the boneless, skinless chicken breasts to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
Grill the Chicken
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken breasts on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
Add Toppings
Add Roasted Red Peppers and Mozzarella
In the last 2 minutes of grilling, place slices of roasted red peppers and mozzarella cheese on top of each chicken breast. Close the grill lid to allow the cheese to melt.
Serve with Sauces
Once the chicken is cooked and the cheese is melted, remove from the grill. Serve topped with tomato sauce and a drizzle of pesto sauce.
