Method

Prepare the Grain Blend

  1. 1

    Cook the Grains

In a medium saucepan, combine the 6-grain blend and water (or vegetable broth). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for about 20 minutes or until all the liquid is absorbed and grains are tender.

  2. 2

    Fluff the Grains

Once cooked, remove from heat and let it sit covered for 5 minutes. Then, fluff the grains with a fork and set aside to cool slightly.

Prepare the Vegetables

  1. 3

    Chop the Vegetables

While the grains are cooking, prepare the vegetables. Dice the tomato and cucumber, slice the avocado and jalapeño, and chop the cilantro. Place all the prepared vegetables in a mixing bowl.

  2. 4

    Add Pickled Onion

Add the pickled onion to the bowl of vegetables and toss gently to combine.

Assemble the Grain Bowl

  1. 5

    Layer the Ingredients

In serving bowls, start with a base of the cooked grain blend. Top with the vegetable mixture, ensuring an even distribution of the tomato, avocado, pickled onion, jalapeño, cucumber, and cilantro.

  2. 6

    Drizzle with Dressing

Drizzle green goddess dressing over the top of each grain bowl. Adjust the amount to your taste.
