Preparing the Fish

    Prepare the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined.

    Mix Wet Ingredients

    In another bowl, beat the egg and add the cold beer or sparkling water. Mix gently until just combined.

    Combine Wet and Dry Ingredients

    Pour the wet mixture into the dry ingredients, stirring until just mixed (lumps are okay). Do not overmix.

    Heat the Oil

    In a large frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip the cod fillets into the batter, allowing excess to drip off.

    Fry the Fish

    Carefully place the battered cod fillets in the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Assembling the Sandwich

    Prepare the Buns

    Toast the hamburger buns in a toaster or on a grill until golden brown.

    Add Toppings

    On the bottom half of each toasted bun, place a leaf of lettuce, a slice of fried cod, a slice of cheddar cheese, and a slice of tomato (sliced into rounds).

    Finish with Sauce

    Spread a generous amount of tartar sauce on the top half of the bun.

    Assemble the Sandwich

    Close the sandwich with the top half of the bun. Serve immediately with additional tartar sauce on the side if desired.
