Preparing the Chipotle Mayo

Combine Ingredients
In a mixing bowl, combine mayonnaise, chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Mix well until smooth and creamy.

Taste and Adjust
Taste the chipotle mayo and adjust seasoning if necessary. Add more chipotle for heat or lime juice for acidity. Set aside.
Cooking the Burger

Shape the Patties
Divide the ground beef into two equal portions and shape each into a patty, about ¾ inch thick. Season both sides with salt and pepper.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes. Remove and drain on paper towels.

Cook the Patties
In the same skillet, cook the beef patties for about 4-5 minutes on one side, then flip and place a slice of pepper jack cheese on each patty. Cook for an additional 3-4 minutes or until the cheese is melted and the patties are cooked to your desired doneness.
Assembling the Burger

Toast the Buns
While the patties are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.

Build the Burger
Spread a generous amount of chipotle mayo on the bottom half of each toasted bun. Place a cheesy beef patty on top, followed by the crispy bacon, and slices of avocado. Top with the other half of the bun.

Serve the California Burger immediately with your choice of sides like fries or a salad.
