Fry the Chips
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the potato slices in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

While the chips are still hot, sprinkle with salt to taste.

Prepare the Blue Cheese Sauce
In a small saucepan, combine the heavy cream and blue cheese over medium heat. Stir until the cheese is melted and the sauce is smooth. Remove from heat and set aside.

Assemble the Blue Chips
On a large serving platter, layer the crispy potato chips. Drizzle the warm blue cheese sauce over the chips, followed by the chopped tomatoes, bacon pieces, red onion, jalapeños, and blue cheese crumbles.
