In a bowl, combine the sliced red onion, apple cider vinegar, sugar, and salt. Stir well until the sugar and salt dissolve. Let it sit for at least 30 minutes to pickle.

Season and Cook the Shrimp
In a bowl, mix together the olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Add the shrimp and toss to coat evenly. Heat a skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes on each side until the shrimp is opaque and slightly charred. Remove from heat.

In a bowl, combine the mashed avocado, buttermilk, ranch seasoning mix, and lime juice. Mix until smooth and creamy. Adjust seasoning if necessary.
