Method
Preparing the Jalapeño Poppers

Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Jalapeños
Slice each jalapeño in half lengthwise and remove the seeds and membranes using a small spoon for a milder flavor, or leave some for extra heat.

Make Filling
In a mixing bowl, combine shredded chicken, crumbled bacon, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Stuff Jalapeños
Using a spoon, generously fill each jalapeño half with the chicken and cheese mixture.

Bake
Place stuffed jalapeños on a baking sheet lined with parchment paper and bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and the jalapeños are tender.
Making the Cilantro Crema

Combine Ingredients
In a small bowl, mix together sour cream, chopped cilantro, lime juice, and salt until smooth and well combined.

Chill
Refrigerate the cilantro crema until ready to serve.
Making the Pico de Gallo

Combine Ingredients
In another bowl, mix diced tomatoes, diced onion, minced jalapeño, chopped cilantro, lime juice, and salt. Stir until combined.

Let the pico de gallo sit for at least 15 minutes before serving to allow flavors to meld.
