Make the Avocado Ranch Dressing
In a blender, combine the ripe avocado, mayonnaise, buttermilk, garlic powder, dried dill, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to use.

Prepare the Fish
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer (or sparkling water) to create a smooth batter. Heat vegetable oil in a deep pan over medium-high heat.

Fry the Fish
Dredge the cod fillets in the batter and carefully place them in the hot oil. Fry until golden and crispy, about 4-5 minutes per side. Remove and place on paper towels to drain excess oil.

Assemble the Tacos
Warm the flour tortillas in a dry skillet. Layer the crispy cod, shredded cabbage, pickled onions, and drizzle with avocado ranch dressing. Garnish with fresh cilantro before serving.
