Pickled Onion Preparation

    Prepare the Pickled Onion

    Thinly slice the red onion and place it in a bowl. In a small pot, combine white vinegar, sugar, and salt, and bring to a simmer. Pour the hot mixture over the onions, ensuring they are fully submerged. Let it sit for at least 30 minutes.

Avocado Ranch Preparation

    Make the Avocado Ranch Dressing

    In a blender, combine the ripe avocado, mayonnaise, buttermilk, garlic powder, dried dill, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to use.

Fish and Tacos Preparation

    Prepare the Fish

    In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer (or sparkling water) to create a smooth batter. Heat vegetable oil in a deep pan over medium-high heat.

    Dredge the cod fillets in the batter and carefully place them in the hot oil. Fry until golden and crispy, about 4-5 minutes per side. Remove and place on paper towels to drain excess oil.
