    Prepare Potatoes

    Wash and peel the potatoes. Slice them thinly using a mandoline or a sharp knife.

    Fry Chips

    Heat the vegetable oil in a large pot over medium heat. Once hot, add the sliced potatoes in batches, frying until golden brown and crispy, about 3-4 minutes per batch.

    Drain and Season

    Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

    Prepare Chili

    If using canned chili, heat it in a saucepan over medium heat until warmed through. If using homemade chili, ensure it is fully cooked and kept warm.

    Finely chop the red onion, tomatoes, and jalapeños. Set aside.

    Make Cheese Sauce

    In a medium saucepan over low heat, combine the American cheese and milk, stirring continuously until melted and smooth. If the sauce is too thick, add more milk to reach the desired consistency.

    On a large serving platter, layer the fried potato chips, then spoon the warm chili over the chips.
