Mozzarella Making Steps
Add Citric Acid
Dissolve the citric acid in a small amount of cool water and add it to the milk. Stir gently and let it sit for 5 minutes.
Add Rennet
Dilute the rennet in a small amount of cool water and add it to the milk mixture. Stir gently for about 30 seconds and then stop stirring. Let it sit undisturbed for 5-10 minutes until the curds form.
Cut the Curds
Using a long knife, cut the curds into 1-inch cubes. Let it sit for an additional 5 minutes.
Cook the Curds
Heat the curds slowly to 105°F (40°C) while gently stirring. Once at temperature, remove from heat and let it sit for another 5 minutes.
Drain the Curds
Using a slotted spoon, transfer curds to a colander lined with cheesecloth. Let drain for about 5 minutes.
Knead the Curds
Transfer the curds to a bowl and sprinkle with salt. Knead the curds with your hands, adding some of the ice water to achieve a smooth and stretchy texture.
Shape the Mozzarella
Form the mozzarella into a ball shape. Place it in a bowl of cold water to cool and firm up.
Store and Enjoy
Store the fresh mozzarella in a container with some of the ice water, and refrigerate. Use within a week for the best flavor.
