Prepare shrimp
Bring a large pot of salted water (about 4 liters) to a rolling boil. Add 1 tablespoon of Old Bay seasoning and the diced lemon halves (use 1 lemon). Drop the shrimp into the boiling water and cook until they turn pink and curl, about 2–3 minutes for large shrimp. Immediately transfer shrimp to an ice bath to stop cooking and keep texture. Drain and chill.

Prepare oysters
Keep oysters on crushed ice. If shucking fresh oysters yourself, hold each oyster flat side up, insert an oyster knife at the hinge, twist to pop, cut the top muscle and remove the lid, then slide the knife under the oyster to free it from the bottom shell, keeping the liquor. Arrange oysters on a bed of crushed ice in a shallow tray so they sit level and don’t spill liquor.

Mussels/Clams (optional)
If using additional cooked mussels or clams, steam them quickly with a splash of water and 1/2 teaspoon Old Bay until shells open, about 4–6 minutes. Discard any that don’t open. Chill and add to platter.

Prepare sauces and garnish
Warm the clarified butter and keep it in a small shallow bowl for dipping. Place cocktail sauce in a separate bowl. Chop parsley and sprinkle lightly over shrimp and shellfish. Arrange lemon wedges around the platter. Season shrimp lightly with sea salt and black pepper. Serve cold on crushed ice with lemon wedges, cocktail sauce, melted butter, and hot sauce on the side.
Pretzel-Wrapped Kielbasa Bites

Prepare kielbasa and dough
Preheat oven to 425°F (220°C). Slice kielbasa into 1.5-inch bite-sized pieces. Roll out pretzel dough on a floured surface into a rectangle about 1/4-inch thick. Cut the dough into strips approximately 1/2-inch wide and 4 inches long (long enough to wrap around each kielbasa piece).

Boil in baking soda bath
Bring a wide shallow pot of water to a simmer and add the baking soda. Working in batches, wrap each kielbasa piece with a dough strip, pinch seam to seal, and drop into the simmering baking soda bath for 20–30 seconds; this step gives pretzels their characteristic crust and chew. Remove with a slotted spoon and place on a parchment-lined baking sheet seam-side down.

Egg wash and bake
Whisk the egg with 1 tablespoon milk. Brush each wrapped piece with egg wash, sprinkle with coarse salt, and bake at 425°F (220°C) for 12–15 minutes, until the dough is deep golden brown. Remove and cool slightly. Serve warm with yellow mustard and honey mustard for dipping; place on a platter next to rolls if using.
Beer Can Chicken (Showstopper)

Prep the chicken
Remove giblets from the chicken and pat dry inside and out with paper towels. Rub the olive oil all over the chicken (including under the skin where possible). In a small bowl combine smoked paprika, garlic powder, onion powder, salt, black pepper and brown sugar. Rub the spice mix evenly over the entire bird, getting into crevices and cavity. Tuck the wing tips under the back. If using fresh herbs, stuff 2 sprigs into the cavity.

Prepare the can and position chicken
Open the beer can and pour out (or drink) about half the beer so the can is half-full. Optionally squeeze a lime wedge into the can. Place the can on a stable sheet pan or drip tray. Lower the chicken onto the beer can so the can fits into the cavity and the bird stands upright on the can and its two legs. If you prefer, use a purpose-built beer-can-style roaster for stability.

Cook (grill or oven)
If grilling: preheat grill to medium indirect heat (about 375°F / 190°C). Place the chicken upright over the drip pan on the cool side of the grill, close the lid and cook until internal temperature at the thickest part of the thigh reaches 165–170°F (74–77°C), about 60–75 minutes depending on size. If using an oven: preheat oven to 375°F (190°C) and roast on a rack in a roasting pan for 60–75 minutes. Rotate once if browning unevenly. Optional: during the last 10 minutes, brush lightly with any reserved marinade or a little olive oil to improve browning.

Rest and carve
Carefully remove the chicken from the grill or oven. Let it rest upright for 10 minutes so juices redistribute (place on a heatproof surface and be cautious with hot beer). Remove the can (use tongs to stabilize) and carve the chicken into pieces. Arrange on a large platter and garnish with remaining herb sprigs and lemon wedges.
Finishing & Serving

Assemble the full spread: set the seafood platter (shrimp, oysters, mussels) on crushed ice at one end of the table with bowls of cocktail sauce, hot sauce, melted butter, lemon wedges, and parsley garnish. Place the warm pretzel-wrapped kielbasa bites on a separate platter with mustard dips and optional buttered rolls nearby. Position the carved beer can chicken centrally as the showpiece. Garnish all platters with fresh dill and additional lemon wedges. Keep chilled items on ice and hot items warm until service.

Serving suggestions: Provide small plates, seafood forks, oyster knives (if guests will shuck), napkins, and wet wipes. Estimate portions: for a party of 8, plan roughly 1/4–1/3 lb shrimp per person, 3 oysters per person, 3–4 kielbasa bites per person, and 2–3 pieces of carved chicken per person depending on appetite.
