    Prepare and portion meats

    Take the soppressata, prosciutto and chorizo/salami out of refrigeration about 10 minutes before assembly to take the chill off. Fold or roll prosciutto slices into loose ribbons (2–3 slices per bundle) and create small fan-shaped stacks of soppressata and chorizo by overlapping slices. Arrange each set into 2–3 small piles on the box so guests can easily pick them up.

    Prepare goat cheese

    Leave the goat cheese log whole or halve it. Score the top lightly with a knife and place it on a small piece of parchment or in a tiny dish so it doesn't smear everything. If you prefer, roll the log in cracked pepper or herbs before placing.

    Cut and present cheeses

    Remove brie and other cheeses from refrigeration 15–20 minutes before serving. Cut cheddar into small bite-sized cubes (about 1/2-inch). Slice manchego thinly into 1/8-inch wedges. Leave the brie as a wedge and score the rind for easy spreading. Place cheeses in separate spots on the box or in small compartments so flavors don’t run together.

    Prepare crackers and toasts

    Slice the baguette 1/4-inch thick. Lightly brush with olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until golden, or toast in a skillet until crisp. Cool completely. Arrange crackers and toasts in small stacks or fanned lines so they’re easy to grab.

    Drain the olives and place them in a small cup or compartment to contain brine. Arrange cornichons beside the olives. Spoon the fig jam or quince paste into a small ramekin or form small quenelles with a spoon and place near soft cheese for spreading.

    Wash and dry grapes and remove from stems. Halve large dried apricots if needed. Place grapes, apricots and marcona almonds in small clusters around the box to add color and to create natural barriers between other items.

    On a shallow box or board, start by placing the cheeses and small ramekins (olives, jam) to anchor the layout. Arrange meats in groups next to cheeses that pair well (e.g., prosciutto by brie). Fill gaps with crackers, baguette slices, grapes, dried fruit and almonds. Tuck in cornichons and olives where they won’t leak. Drizzle honey lightly over a small pile of cheese cubes or serve honey in a small container. Garnish with rosemary sprigs and microgreens for color. Check that each section is accessible and that there are utensils (cheese knife, small spoon) included.

    If packing for transport: wrap the box with cling film or place a lid on the container. Place soft cheeses on the bottom and secure ramekins to prevent spilling. Include separate small packets of crackers if you want to keep them crisp.
