    Chill glass

    If desired, place the highball or copa glass in the freezer for 5–10 minutes or fill with ice and water to chill while you prepare the rest of the ingredients. Discard chilling ice/water before assembling.

    Build base

    Add fresh ice to the chilled glass so it is about three-quarters full. Pour 2 oz H.O.B.S. Gin over the ice using a jigger for accuracy.

    Brighten and balance

    Add 0.5 oz fresh lime juice and 0.25 oz simple syrup to the gin to give the Modern G&T a bright, slightly rounded profile that complements H.O.B.S. Gin's botanicals.

    Add bitters

    Add 2 dashes of orange bitters on top of the gin-lime-syrup mixture to introduce a gentle citrus spice note.

    Top with tonic

    Slowly pour 4 oz premium tonic water down the back of a bar spoon (or gently down the side of the glass) to preserve carbonation and create a gentle layering. Do not stir vigorously.

    Lightly stir

    Using a bar spoon, give the drink 2 gentle turns to integrate the gin, citrus, and bitters with the tonic without flattening the bubbles.

Garnish

    Express the orange peel over the drink: hold the peel with the outside facing down over the glass and give it a firm squeeze to release essential oils across the surface. Rub the peel around the glass rim and drop it into the drink.

    Float a lime wheel on the top of the drink or clip it to the rim. If using, gently slap the rosemary sprig between your palms to release aromatics and position it standing in the drink as an aromatic accent.

    Serve immediately with a short straw or without—enjoy while cold and fizzy.

    Use fresh lime juice for best balance; pre-bottled lime will make the cocktail dull. Adjust simple syrup to taste—if H.O.B.S. Gin is particularly floral or citrus-forward, you might skip the syrup and instead use an additional 0.25 oz tonic.

    If you prefer a lighter drink, increase tonic to 5–6 oz and reduce gin to 1.5 oz. For a stronger profile, keep gin at 2.25 oz and tonic at 3.5 oz.
