    Prepare bread and cheese

    Spread about 1/2 tablespoon of softened butter evenly on one side of each bread slice (total ~2 tablespoons for 4 slices). On the unbuttered side of two slices, spread 1/2 teaspoon Dijon mustard if using. Divide the cheddar (1.5 cups) evenly and sprinkle it over the mustard or directly onto the unbuttered sides. Add the optional American slices and the 1/2 cup Gruyère/fontina evenly on top of the cheddar. Lightly season the cheese layers with a pinch of salt (about 1/8–1/4 teaspoon total) and a few grinds of black pepper.

    Assemble sandwiches

    Top each prepared slice with the remaining bread slice so the buttered sides face outward (butter side out). Gently press the sandwiches together to compact the filling evenly.

    Preheat pan

    Place a large nonstick or cast-iron skillet over medium-low to medium heat. Allow it to come up to temperature for 2 minutes; you want a moderate heat so the bread browns slowly and the cheese melts fully without burning.

    Cook first side

    Place one sandwich in the skillet, buttered side down. Cook undisturbed for 3–4 minutes, occasionally checking the underside. When the bread is golden brown and crisp, carefully flip the sandwich with a spatula.

    Cook second side and melt cheese

    After flipping, cook the second side 2.5–4 minutes more. If the bread is browning faster than the cheese is melting, reduce heat to low and cover the skillet with a lid for 1–2 minutes to trap heat and encourage even melting. Remove the lid and continue cooking until the second side is golden and the cheese is gooey and fully melted.

    Repeat for second sandwich

    Remove the finished sandwich to a cutting board and let rest 1 minute. Repeat cooking steps for the second sandwich. If needed, wipe excess browned butter from the skillet and add a small knob of butter before cooking the next sandwich.

    Slice and serve

    Using a sharp knife or sandwich cutter, slice each grilled cheese diagonally (or in half) to expose the gooey interior. Serve immediately while hot and melty.
