    Prepare avocados

    Halve the avocados, remove the pits, and peel them. Slice each half into 4–6 even wedges (about 8–12 wedges total from 2 avocados). Pat the slices dry with paper towels to remove excess moisture — this helps the batter adhere.

    Set up dredging station

    Place the all-purpose flour in a shallow bowl and season with 1/2 tsp of the kosher salt and 1/4 tsp black pepper. In a second shallow bowl, whisk the eggs with the cold sparkling water until combined (this makes a light tempura-like batter). In a third shallow bowl, combine the cornmeal or panko with the remaining 1/2 tsp kosher salt, 3/4 tsp black pepper, garlic powder, and smoked paprika. Mix thoroughly.

    Coat avocado wedges

    Working in batches to avoid crowding, lightly toss each avocado wedge in the seasoned flour to coat — shake off excess. Dip into the egg-sparkling water mixture, letting excess drip back into the bowl. Press into the cornmeal/panko mixture to thoroughly coat all sides. Place coated wedges on a wire rack while you heat the oil. If you need extra crunch, double-dip: back into the egg mixture and into the panko again.

    Heat oil and fry

    Pour vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 inch. Heat over medium-high until the oil reaches 350°F (175°C) or until a small breadcrumb sizzles and browns in about 15–20 seconds. Fry the avocado wedges in batches (do not overcrowd) for 1.5–2.5 minutes per side, turning once, until golden brown and crisp. Use a slotted spoon or spider to transfer to a paper-towel-lined plate or wire rack. Lightly season with coarse sea salt while still hot.

    Keep warm

    If frying multiple batches, keep finished wedges warm on a sheet pan in a 200°F (95°C) oven for up to 15 minutes while you finish frying the rest, so they stay crisp.

Citrus-Lime Dipping Sauce

    While the oil heats, whisk together the Greek yogurt (or sour cream), mayonnaise, lime juice, honey, chopped cilantro, salt, and optional hot sauce in a small bowl until smooth and tasting balanced. Adjust lime or honey to taste. Refrigerate until ready to serve.

Garnish & Serve

    Arrange the crispy avocado wedges on a serving platter. Sprinkle with the remaining 1/4 tsp coarse sea salt (or to taste) and scatter microgreens or chopped cilantro over the top. Serve immediately with lime wedges and the citrus-lime dipping sauce on the side.
