Cheeses

Method

Cheeses

  1. 1

    Prepare cheeses

Remove cheeses from the refrigerator 30–60 minutes before serving so they come to room temperature. Leave the rind on brie and the Manchego; pat cheeses dry if any condensation has formed.

  2. 2

Cut the aged cheddar into 1/4–1/2-inch slices or bite-size cubes. For Manchego, cut into thin triangles or small wedges. For goat cheese, slice into rounds or create a log with a drizzle of honey and a crack of black pepper. Keep the brie whole but slice a small wedge off to show the paste and make it easy to serve.

Cured Meats

  1. 3

    Arrange meats

Fold prosciutto slices into loose ribbons or small rosettes. Stack salami and slice into half-moons or leave pre-sliced rounds slightly overlapped. Slice soppressata into 1/8–1/4-inch rounds if not pre-sliced. Arrange meats in small piles or fan them out on the board so guests can easily pick them up without touching other items.

Accompaniments (sweet & savory)

  1. 4

    Prepare small bowls

Place mixed olives, cornichons, fig jam, whole grain mustard, and honey into small bowls or ramekins. If serving honey with brie, warm 1 tablespoon of honey briefly in a microwave (5–8 seconds) to loosen it.

  2. 5

Scatter dried apricots, nuts, and fresh grapes in small clusters around the board. Halve fresh figs and arrange cut-side up so they look attractive and are easy to grab.

Breads & Crackers

  1. 6

    Prep breads

Slice the baguette on a bias into 1/4-inch slices. Lightly brush with olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until just golden, or toast in a skillet. Arrange crackers and toasted baguette slices on one side of the board in small stacks or fanned rows.

Garnish & Final assembly

  1. 7

    Build the board

Choose a large wooden board or platter. Start by placing bowls/ramekins for olives, honey, jam, and mustard spaced across the board. Next, place the largest cheeses (brie and cheddar) spaced apart. Arrange meat piles near cheeses that pair well (prosciutto by brie, salami by cheddar). Fill in gaps with crackers, baguette slices, nuts, dried fruit, and grape clusters so the surface looks abundant but balanced.

  2. 8

Add finishing touches: tuck rosemary sprigs and a few edible flowers or microgreens around the edges for color. Lightly crack black pepper over the goat cheese or brie if desired. Provide small cheese knives or spreaders for each cheese and small spoons for jams and honey.

  3. 9

Serve: advise guests to start with mild cheeses and move to stronger flavors. Replace empty items during service to keep the board attractive.
