Prep the chicken

Pat the chicken dry with paper towels. Trim any excess fat. If using breasts, slice horizontally into two thinner cutlets for even cooking. Cut the chicken into 1/2- to 3/4-inch strips or bite-sized pieces depending on how you plan to serve (sandwiches or tacos).

Season and lightly dust

In a bowl, combine kosher salt, black pepper, garlic powder, and smoked paprika. Toss the chicken pieces with the spice mix until evenly coated. Sprinkle cornstarch over the seasoned chicken and toss again so each piece has a light dusting — this helps create a slightly crisp exterior when cooked.

Pan-fry the chicken

Heat a large skillet over medium-high heat and add neutral oil. When the oil is shimmering, add chicken pieces in a single layer without crowding (work in batches if necessary). Cook 3–4 minutes per side, until golden brown and an instant-read thermometer reads 165°F (74°C). Remove cooked pieces to a plate and keep warm.

Make the buffalo sauce

In the same skillet over low heat, melt unsalted butter. Add the hot sauce, honey, apple cider vinegar, and Worcestershire sauce. Whisk until fully combined and slightly warm — do not boil. Taste and adjust: add hot honey or an extra teaspoon of honey if you want sweeter heat, or a splash more vinegar for tang.

Toss chicken in sauce

Return the cooked chicken pieces to the skillet with the warm sauce. Toss with tongs until each piece is evenly coated, 1–2 minutes. Remove from heat.

Crunchy 'wild' topping

While chicken cooks, combine panko breadcrumbs and crushed cornflakes in a dry skillet over medium heat. Add olive oil and toast, stirring frequently, until lightly golden and fragrant, about 3–4 minutes. Remove from heat and immediately stir in sesame seeds, lime zest, sliced scallions, and chopped cilantro. Spread on a small plate to cool slightly — it will crisp further as it cools.

Creamy cooling sauce

In a small bowl whisk together Greek yogurt, mayonnaise, lemon juice, cold water (just to thin to a drizzleable consistency), salt, pepper, and chopped chives. Taste and adjust seasoning. Refrigerate until ready to serve.

To serve

If toasting buns: heat a skillet over medium heat and lightly butter the cut sides of buns. Toast 1–2 minutes until golden. Alternatively warm tortillas in a dry skillet or microwave briefly.

Assemble: spread a layer of the creamy cooling sauce on the bun or tortilla. Add a handful of shredded lettuce, top with several pieces of sauced buffalo chicken, then sprinkle the crunchy ‘wild’ topping generously over the chicken. Add pickles and extra hot sauce to taste. Finish with a few extra cilantro leaves or scallions if desired.
