Prepare Citrus Base

Juice and zest lemons

Zest one or two lemons until you have about 1 tablespoon zest. Roll the lemons on the counter to loosen juices, then cut and juice until you have 3/4 cup (about 4–6 medium lemons). Strain juice through a fine-mesh sieve into a measuring cup to remove seeds and pulp if you prefer a smoother cooler.

Mix lemon juice, lemon zest, and simple syrup in a pitcher. Stir for 15–20 seconds until well combined. Taste and adjust sweetness: add up to 2 tablespoons more simple syrup if you prefer sweeter, or up to 2 tablespoons water if it’s too intense.

Chill & Combine

Add ice and sparkling water

Add 3 cups of ice to the pitcher or individual glasses. Pour the 2 cups of cold sparkling water into the lemon-syrup mixture. Stir gently 6–8 times to combine without flattening the bubbles.

If making single glasses rather than a pitcher: fill each glass halfway with ice, pour 1/2 cup lemon base, then top with 1/2 cup sparkling water, stirring gently.

Optional Finishes

Bruise the mint leaves by gently clapping them between your palms or lightly muddling in the bottom of the pitcher/glass to release aroma, then add to the cooler. Add cucumber slices for a fresh vegetal note.

If using ground ginger, whisk it into the lemon-syrup before adding sparkling water to avoid clumping; if using ginger syrup, add 1 teaspoon to the pitcher with the simple syrup and adjust to taste.

Garnish each glass with a lemon wheel and a sprig of mint. Serve immediately so the drink remains fizzy.
