Make the hibiscus infusion

Bring 2 cups of water to a near boil in a small saucepan. Remove from heat, add the dried hibiscus flowers, cover, and steep for 10 minutes to extract color and flavor. (If using hibiscus tea bags, use 3 bags and steep the same time.)

Strain and sweeten

Strain the hibiscus infusion through a fine-mesh sieve into a heatproof pitcher, pressing gently on solids to extract liquid. Discard solids. While the infusion is still warm, stir in the granulated sugar (or honey/agave) until fully dissolved.

Cook blueberries (optional for deeper flavor)

In a small saucepan combine the blueberries and 1/2 cup of water. Bring to a gentle simmer over medium heat and cook, stirring occasionally, 5–7 minutes until berries burst and release juices. Remove from heat and mash lightly with a fork, then strain through a sieve into the hibiscus infusion to remove skins and seeds. If you prefer a chunkier cooler, skip straining and keep the cooked berries as-is.

Combine and chill

Add the remaining 1.5 cups of cold water and the fresh lemon juice to the hibiscus-blueberry liquid. Stir to combine. Taste and adjust sweetness or lemon as desired. Chill the base in the refrigerator at least 30 minutes until cold (or use ice to cool immediately).

Assemble the cooler

Fill each serving glass halfway with ice. Pour the chilled hibiscus-blueberry base into each glass to fill about two-thirds of the way. Top each glass with chilled sparkling water or club soda (roughly a 2:1 ratio base to sparkling, adjust to taste) and gently stir once to combine.

Garnish and finish

Garnish each glass with a lemon slice, a few fresh blueberries, and a sprig of mint. Serve immediately. Optionally, bruise the mint slightly between your fingers before garnishing to release aroma.

Make-ahead and variations

The hibiscus-blueberry base can be made up to 3 days ahead and kept refrigerated in a sealed container. Add sparkling water just before serving to preserve fizz. For an adult version, add 1–1.5 oz (30–45 ml) vodka or gin per serving when topping with sparkling water.
