Prepare and season

Pat chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound them to an even thickness (~3/4 inch) so they cook evenly. Brush both sides lightly with 1 tablespoon olive oil and season with 1/2 teaspoon kosher salt, 1 teaspoon garlic powder and 1 teaspoon black pepper.

Cook the chicken

Heat a large skillet or grill pan over medium-high heat until hot. Add a small drizzle of oil or spray. Place chicken in the pan and cook undisturbed 4–6 minutes per side (depending on thickness) until a golden crust forms and internal temperature reaches 165°F (74°C). Remove from pan and let rest on a cutting board for 5 minutes.

Slice

Slice the rested chicken into 1/4-inch thick strips or bite-sized pieces against the grain. Keep warm until ready to assemble salad.

Caesar Dressing

Make dressing

In a medium bowl, mash the anchovy fillets with the minced garlic and a pinch of salt until they form a paste. Add 1/2 cup mayonnaise, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, and 1 teaspoon Worcestershire sauce. Whisk to combine. Slowly drizzle in 2 tablespoons extra-virgin olive oil while whisking to emulsify. Stir in 2 tablespoons freshly grated Parmesan and season with 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust lemon, salt or anchovy to preference.

Thin if needed

If the dressing is too thick, whisk in up to 1 tablespoon of water at a time until it reaches desired pouring consistency.

Salad Assembly

Tear or chop the washed romaine into bite-sized pieces and place in a large salad bowl. Add about 3/4 cup of the grated Parmesan (reserve the rest for garnish) and 1 cup croutons.

Add sliced chicken on top of the lettuce. Drizzle 3–4 tablespoons of the Caesar dressing over the salad (or more to taste). Toss gently with salad tongs until leaves are evenly coated and ingredients are distributed.

Plate or serve family-style. Finish with the remaining Parmesan, a crack of fresh black pepper, and additional croutons if desired. Serve immediately.
