    Prep pancetta

    Pat the pancetta dry with paper towels if it is wet. Dice into roughly 1/4-inch cubes for even browning.

    Place a large skillet over medium heat. Add the diced pancetta in a single layer (no additional oil needed). Cook, stirring occasionally, until the fat renders and the pieces are golden and crisp at the edges, about 8–10 minutes. Reduce heat slightly if pieces start to burn.

    Using a slotted spoon, transfer about two tablespoons of the rendered fat to a small bowl and reserve (you can discard excess later or save for another use). Leave the pancetta pieces in the skillet over low heat.

    In a small bowl, whisk together honey, apple cider vinegar, soy sauce, and black pepper until smooth.

    Raise the skillet heat to medium-low. Pour the honey mixture over the pancetta and toss to coat. Cook, stirring constantly, for 1–2 minutes until the honey begins to bubble and thicken into a glossy glaze that clings to the pancetta pieces. Watch carefully to avoid burning; lower the heat if necessary.

    If glaze becomes too thick, add 1 teaspoon of warm water or the reserved pancetta fat to loosen and coat evenly.

Finishing & Garnish

    Remove the skillet from heat. Stir in the fresh thyme leaves and lemon zest to brighten the glaze and distribute aromatics.

    Taste one piece; sprinkle up to 1/4 teaspoon coarse sea salt only if needed (pancetta can be salty already).

    If using toasted nuts, sprinkle them over the glazed pancetta and gently toss to combine for texture and nuttiness.

Optional Serving Assembly

    If serving on crostini: lightly toast the bread slices. Spread about 1 teaspoon of goat cheese or ricotta on each piece.
