Truffle Dip

Method

Truffle Dip

1

Soften and combine base

Remove the cream cheese from the refrigerator 30–60 minutes before starting so it softens. In a medium bowl, use a hand mixer or sturdy spatula to beat the softened cream cheese until smooth and lump-free.

2

Add creamy components

Add the sour cream and mayonnaise to the bowl. Mix on low to medium speed until fully incorporated and the mixture is smooth, about 30–60 seconds.

3

Incorporate cheeses and aromatics

Fold in the grated Parmesan and optional Pecorino until evenly distributed. Stir in the minced garlic, chopped chives, chopped parsley, lemon zest, black pepper, and sea salt. Taste and adjust seasoning; the cheeses add salt, so add more salt only if needed.

4

Add truffle flavor

Drizzle in 2 teaspoons of black truffle oil and fold gently. Start with 1½ teaspoons if your oil is very potent, then add the remaining ½ teaspoon to taste. If using white truffle oil for a more layered aroma, add ½ teaspoon and gently swirl it in—white truffle oil can be very strong, so add conservatively.

5

Chill and let flavors meld

Transfer the dip to a serving bowl, cover tightly with plastic wrap (press the wrap onto the surface to minimize air), and refrigerate for at least 45 minutes, ideally 2 hours, to let the truffle aroma and garlic mellow and the flavors marry. Bring to room temperature for 10–15 minutes before serving for best texture and aroma.

6

Adjust final seasoning

After chilling, taste again and add additional black pepper or a few drops more truffle oil if desired. If the dip is too thick, stir in 1–2 teaspoons of milk or additional sour cream to reach desired consistency.

Crisp Dippers & Assembly

7

Prepare crostini

Preheat oven to 375°F (190°C). Arrange baguette slices in a single layer on a baking sheet. Brush each slice lightly with extra-virgin olive oil (about 2 teaspoons per 10–12 slices). Sprinkle with a pinch of sea salt.

8

Bake until crisp

Bake the slices for 8–12 minutes, flipping once halfway through, until they are golden and crisp at the edges. Watch closely to avoid burning. Remove from oven and cool on a wire rack.

9

Optional prosciutto or smoked salmon

If using prosciutto, loosely drape slices over some crostini for a savory topper. If using smoked salmon, fold small ribbons and place on a few crostini to offer a luxe option alongside plain crisp dippers.

10

Assemble and garnish

Spoon the chilled truffle dip into a shallow serving bowl and drizzle a few drops of truffle oil on top for presentation. Garnish with extra chopped chives and microgreens. Place the crostini, prosciutto/salmon slices, and any leftover herbs on the serving platter around the bowl.

11

Serve

Allow guests to spread the dip onto crostini or use the crisp dippers to scoop. Best served within 4 hours of assembly; refrigerate any leftovers in an airtight container for up to 3 days.
