Preheat oven
Place a pizza stone or inverted baking sheet in the oven and preheat to 250°C (480°F) for at least 30 minutes. If your oven doesn't reach 250°C, preheat to the highest temperature available.
Prepare sauce
In a small bowl, mix the tomato passata with 1 tablespoon olive oil, 1/4 tsp salt and 1/2 tsp dried oregano. Taste and adjust seasoning; set aside.
Shape dough
On a lightly floured surface, stretch or roll the pizza dough to a 12–13 inch (30–33 cm) round, leaving a slightly thicker rim. Transfer to a well-floured pizza peel or an inverted baking sheet lined with parchment for easy transfer.
Brush the dough rim lightly with the remaining 1 teaspoon of olive oil, then spread the prepared tomato sauce evenly over the center of the dough leaving the rim clear.
Cheese
Scatter the shredded or torn fresh mozzarella evenly over the sauced dough in a single layer so the cheese will melt consistently.

Cook fries
Bake the frozen french fries according to package instructions until golden and crisp (usually 15–20 minutes at 220°C / 425°F). For best results, bake them a few minutes less than fully crisp so they finish on the pizza without burning. Drain any excess oil and set aside on paper towel.
Prepare sausages
If sausages are uncooked, pan-fry or simmer them until fully cooked, then cool slightly and slice each sausage on the bias into 6–8 pieces. If pre-cooked, warm briefly and slice as above.
Evenly distribute the sliced hot dog sausages over the mozzarella. Arrange the par-baked fries on top of the sausages and cheese—a single layer is best so the pizza bakes evenly.
Season the assembled pizza with 1/4 tsp freshly ground black pepper.
Bake pizza
Slide the pizza onto the preheated stone or baking sheet and bake at 250°C (480°F) for 7–10 minutes, or until the crust is golden and cheese is bubbly and slightly browned. If oven temperature is lower, bake 10–14 minutes and watch for doneness.
Finish & serve
Remove pizza from oven. Drizzle or dot mustard and ketchup over the fries and sausages in a pattern you prefer, or serve condiments on the side for dipping. Sprinkle chopped fresh parsley for color if using. Let rest 2 minutes, slice into 6–8 pieces and serve hot.
