Prepare cheese

Cut smoked mozzarella into 16 even bite-sized pieces (about 2.5–3 cm / 1 inch cubes). Pat dry on paper towel to remove excess moisture so coating adheres.

Make breading stations

Place flour in a shallow wide bowl. In a second bowl, whisk together the eggs and milk until smooth. In a third shallow bowl, combine breadcrumbs, grated Parmesan, dried Italian herbs, 1/2 teaspoon salt and 1/2 teaspoon black pepper; mix to combine.

Bread the cheese

Working with 2–4 pieces at a time, dredge each mozzarella cube in flour (shake off excess), dip into egg mixture, then press into the breadcrumb mixture to fully coat. For a sturdier crust and to reduce leaking, place coated pieces on a tray and refrigerate for 20–30 minutes. For extra-crisp double-coating: repeat the egg and breadcrumb step a second time.

Heat oil

Pour neutral oil into a wide, heavy pot or deep skillet to a depth of about 5 cm (2 in). Heat over medium-high until oil reaches 175°C (350°F) — test by dropping one breadcrumb; it should sizzle and turn golden within 30 seconds. If you don't have a thermometer, heat until a wooden chopstick produces steady small bubbles.

Fry the bites

Fry the coated mozzarella in batches (do not overcrowd) for 1.5–2.5 minutes per batch, turning gently so all sides brown evenly. The coating should be golden and crisp; the cheese inside will soften and stretch but should not burst. Use a slotted spoon to transfer to a paper towel–lined tray to drain. If cheese starts leaking excessively, stop and allow oil to cool slightly before continuing or reduce oil temperature by 10–15°C.

Season while hot

Immediately sprinkle fried bites with the remaining 1/2 tsp salt and 1/2 tsp black pepper (even distribution) and let rest 1–2 minutes so crust firms up before serving.

Smoked chilli jam (quick stovetop)

Make the jam: In a small saucepan, warm olive oil over low heat. Add chopped chipotle and smoked paprika; stir for 20–30 seconds to release aroma. Add red chilli jam, apple cider vinegar and lemon juice. Bring to a gentle simmer, stir to combine and cook 2–3 minutes until glossy and slightly reduced. Taste and add 1/4 tsp salt or additional vinegar if more acidity is needed. Remove from heat and let cool slightly — the jam will thicken as it cools.

Finishing & serving

Plate: Arrange 16 smoked mozzarella bites on a serving platter. Spoon 2–3 tablespoons of smoked chilli jam into a small bowl for dipping and place on platter, or drizzle a little jam over bites if preferred.

Garnish and serve: Scatter chopped parsley over the bites and serve with lemon wedges on the side. Serve immediately while hot so the cheese has maximum stretch.

Storage and reheating: For best results eat fresh. If you must store, cool completely, refrigerate in an airtight container up to 24 hours. Re-crisp in a 200°C (390°F) oven for 6–8 minutes or in an air fryer 3–5 minutes. Do not microwave (will become soggy and over-melt).
