Refrigerate on a tray, uncovered, for 15–20 minutes to firm slightly (this helps reduce melting during frying).

Smoked Paprika Panko Coating

Combine 1 cup panko breadcrumbs, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 tablespoon finely grated Parmesan, 1 teaspoon salt, and 1/2 teaspoon ground black pepper in a shallow bowl or plate. Mix thoroughly so the spices and cheese are evenly distributed.

Deep-frying method

Pour neutral oil into a heavy-bottomed pot to a depth of about 2 inches (use enough oil to fully submerge the bites). Heat oil to 350°F (175°C). Fry the frozen mozzarella bites in small batches for 1 to 1.5 minutes, turning as needed, until golden brown. Do not overcrowd. Remove with a slotted spoon and drain on a wire rack or paper towels. Let rest 1–2 minutes before serving so the cheese re-stabilizes.

Air-fryer method

Preheat the air fryer to 400°F (200°C). Lightly coat the bites with cooking spray. Arrange in a single layer in the basket without overcrowding. Cook 6–8 minutes, turning halfway, until golden and crisp. Times vary by model; watch carefully to avoid bursting. Let rest 1–2 minutes before serving.

If desired, while still warm sprinkle torn basil leaves and 1/2 teaspoon lemon zest over the bites for brightness.
