Brew 4 cups strong black tea. Use 4 tea bags or 4 tablespoons loose tea in 4 cups (950 ml) near-boiling water. Steep 4–5 minutes for a robust flavor, then remove tea leaves or bags. Let the tea cool to room temperature or chill in the refrigerator until cold (about 30–60 minutes).
When ready to assemble, fill a cocktail shaker halfway with ice (about 3/4 cup). Add 6 ounces (3/4 cup) of the chilled brewed tea to the shaker (you will use the rest when building the drinks).
Italian peach syrup
Make peach puree
Place the chopped peaches in a blender or food processor and puree until smooth, about 30–45 seconds. If peaches are very fibrous, pulse then blend to get a smooth texture.
Cook syrup
In a small saucepan combine 1 cup sugar and 1 cup water. Heat over medium, stirring until sugar dissolves. Add the peach puree and bring to a gentle simmer. Cook 6–8 minutes, stirring occasionally, until slightly thickened and the peach flavor concentrates. Remove from heat and stir in 1 tablespoon lemon juice to brighten the flavor.
Strain (optional) and cool: For a silky Italian-style syrup, press the cooked mixture through a fine-mesh sieve into a bowl to remove solids. Cool to room temperature, then refrigerate until cold. The syrup will keep in a sealed container in the fridge for up to 7 days.
Assemble & shake
Measure: For each serving (makes 4 servings total), use 1/4 cup peach syrup and 3/4 cup brewed tea per glass. Add 1/2 tablespoon fresh lemon juice per glass.
Shake (per 1 serving or batch): In the cocktail shaker pre-filled with ice and 3/4 cup chilled tea (from Tea section), add 1/4 cup peach syrup and 1/2 tablespoon fresh lemon juice. Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the contents are well mixed and chilled.
Serve: Fill each serving glass with about 3/4 cup (6 oz) ice (or enough to leave room for the shaken mix). Strain the shaken mixture into the glass over the ice. Top with the remaining chilled brewed tea if needed to fill the glass (about 1–2 tablespoons), and gently stir once to integrate.
Garnish: Add a slice of fresh peach and a sprig of mint if desired. Serve immediately with a straw.
