Add the gin (or tequila), elderflower liqueur, fresh lemon juice and honey syrup to a cocktail shaker. Fill the shaker about two-thirds with ice. Cap and shake vigorously for 10–15 seconds until well chilled and slightly diluted.
If you prefer a smoother texture from the honey, double-strain the shaken mixture into a serving glass through a fine-mesh strainer to remove ice shards and any coagulated honey bits.
Assemble & Top
Fill a large wine glass or rocks glass with fresh ice (about 1 cup). Strain the shaken base over the ice.
Top the strained cocktail with the chilled prosecco (about 3 oz). If you want a longer, lower-alcohol drink, add 1 oz club soda after the prosecco.
Gently stir once with a bar spoon to integrate the sparkling wine without losing too much effervescence.
Garnish & Finish
Lightly slap the thyme sprig between your palms to release aromatic oils and float or tuck it into the glass as a fragrant garnish.
Serve immediately while the prosecco is lively.
