Make the dough

In a small bowl, sprinkle 0.5 tsp active dry yeast and 0.25 tsp sugar over 0.5 cup warm water (about 100–110°F / 38–43°C). Let stand 5–7 minutes until foamy. In a mixing bowl, combine 1.5 cups all-purpose flour and 0.5 tsp salt. Make a well, add the foamy yeast mixture and 1 tbs olive oil. Mix with a spoon until a shaggy dough forms, then turn onto a lightly floured surface and knead 4–6 minutes until smooth and slightly elastic. If dough is too sticky, add up to 1 more tablespoon flour. Form into a ball.

Rest the dough

Place the dough ball in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rest at room temperature for 30–45 minutes until barely puffy. For a quicker option, you can proceed after 20 minutes — this is a small half-size dough for kids' pizza.

Preheat and shape

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. On a lightly floured surface, press and stretch the dough into a roughly 7–8 inch (18–20 cm) round about 1/8–1/4 inch thick for a half-size pizza. Transfer to a piece of parchment paper or a lightly floured baking sheet.

Assemble

Spread 0.5 cup tomato sauce evenly over the dough, leaving a 1/2 inch border for the crust. Tear 4 oz fresh mozzarella into pieces and distribute evenly. Add any up-to-two optional toppings (for example: 6–8 slices pepperoni OR 2–3 thin slices ham and a few bell pepper strips). Sprinkle 1 tbs grated parmesan over the top and drizzle 0.5 tsp olive oil around the edges.

Bake

Slide the pizza (on parchment or baking sheet) into the preheated oven or onto the stone. Bake 8–10 minutes until crust is golden and cheese is bubbling and lightly browned. Baking time may vary by oven; watch closely after 7 minutes.

Finish

Remove pizza from oven. Scatter 6 fresh basil leaves over the hot pizza. Let rest 1–2 minutes, then slice into kid-friendly pieces. Serve warm.

Juice

Pour 200 ml of chilled orange or apple juice into a small glass. Add 2–3 ice cubes if desired. Serve alongside the pizza.

Gelato with Nutella

Place 1 scoop of vanilla gelato in a small dessert bowl or cup. Warm 1 tbs Nutella slightly (5–8 seconds) in the microwave until pourable, or thin with a few drops of warm milk. Drizzle the Nutella over the gelato. Sprinkle 0.5 tsp chopped hazelnuts if using. Serve immediately.
