Flatbread & dough
Activate yeast and make dough
In a small bowl, combine warm water (about 105–115°F / 40–46°C), sugar, and active dry yeast. Stir and let sit 5–8 minutes until foamy. In a large bowl, combine flour and salt. Add the foamy yeast mixture and 1 tablespoon olive oil. Mix until a shaggy dough forms; turn out onto a lightly floured surface and knead 6–8 minutes until smooth and elastic (or mix with a stand mixer 4–5 minutes).
Proof
Lightly oil a clean bowl with remaining 1 tablespoon olive oil. Place dough in the bowl, cover with plastic wrap or a clean towel, and let rise in a warm place until doubled, about 60–75 minutes.
Portion and roll
Punch down the dough and divide into 12 equal portions (about 1.5–2 ounces each). On a lightly floured surface, roll each portion into a thin oval or round about 4–5 inches across; these will be the flatbread discs that accompany the fried mozzarella bites. Place rolled discs on a tray dusted with flour and cover while you prepare the mozzarella and frying station.

Prepare mozzarella
Cut the fresh mozzarella into bite-sized pieces about 1 to 1½ inches square (or use small bocconcini halved if using small balls). Pat each piece dry with paper towels to remove excess moisture — this improves coating adhesion and helps prevent breakage during frying.
Set up dredging stations
Place 1 cup flour in a shallow bowl or plate. In a second shallow bowl, whisk together the 2 eggs and 2 tablespoons milk until smooth. In a third shallow bowl, combine panko breadcrumbs, optional cornmeal, ½ teaspoon salt, and ¼ teaspoon black pepper. For extra-crisp results, pulse panko briefly in a food processor to create slightly smaller crumbs.
Triple-coat the mozzarella
Working in batches, dredge each dried mozzarella piece in flour, shaking off excess. Dip into the egg mixture, then press thoroughly into the breadcrumb mixture to coat well. For a thicker, more secure crust, repeat: dip coated piece back into egg and again into breadcrumbs for a double-coated shell. Place coated pieces on a parchment-lined tray and chill 10–15 minutes in the fridge to set the coating before frying.

Heat oil
Pour neutral oil into a heavy-bottomed skillet or medium saucepan to a depth of about 1¼–1½ inches (approximately 1 cup listed, add more if your pan requires). Heat oil over medium heat until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with one breadcrumb — it should sizzle and brown in about 30–45 seconds.
Fry mozzarella bites
Working in small batches (don't overcrowd), gently lower chilled coated mozzarella pieces into the oil. Fry 1½–2 minutes, turning once, until golden brown and crisp. Use a slotted spoon or spider to transfer to a wire rack set over a baking sheet or to paper towels to drain briefly. Allow fried pieces to rest 1–2 minutes so cheese doesn't immediately burst out; keep warm in a low oven (200°F / 95°C) if frying multiple batches.
Flatbread & finishing (grill/toast)
Cook flatbreads
While frying or after, heat a dry skillet or griddle over medium-high heat. Lightly brush each rolled flatbread with ½ teaspoon olive oil (you can use leftover oil from dough if desired). Cook flatbreads 1–1½ minutes per side until charred spots appear and they are puffed and cooked through. Transfer to a plate and keep warm covered with a towel.
Glaze & finishing
Make balsamic-honey glaze
In a small saucepan, combine ½ cup balsamic vinegar and 3 tablespoons honey. Bring to a gentle boil over medium heat, then reduce to a simmer and cook until syrupy and reduced by about half (to roughly 6–7 tablespoons), about 8–10 minutes. Remove from heat and stir in lemon zest. Taste and adjust sweetness or tang by adding a tiny pinch more honey or a splash of vinegar if needed. Let cool slightly; glaze will thicken as it cools.
Assemble fritto of bites
Place 3 flatbreads per serving on a platter (or serve family-style). Arrange fried mozzarella bites atop or beside the flatbreads. Drizzle warm (not boiling) balsamic-honey glaze over the bites and flatbreads (about 1–1½ teaspoons glaze per bite). Scatter fresh basil chiffonade over the top and finish with a light sprinkle of sea salt flakes. Serve immediately so the contrast of hot, gooey cheese and crisp coating with warm flatbread and sweet-tangy glaze is preserved.
