Extract Juice and Zest

Wash the oranges. Zest one orange until you have about 1 tablespoon of zest. Juice enough oranges to yield 1 cup (240 ml) of fresh orange juice. Strain the juice through a fine mesh sieve to remove pulp and seeds if you prefer a clearer drink.

Make Orange Syrup

Combine the fresh orange juice, granulated sugar, and orange zest in a small saucepan. Warm gently over medium-low heat, stirring until the sugar completely dissolves (do not boil). Once dissolved and the mixture is fragrant (about 3–5 minutes), remove from heat. Stir in the lemon juice to brighten the flavor.

Cool and Chill

Allow the syrup to cool to room temperature, then transfer to a container and chill in the refrigerator until cold (at least 30 minutes). If you want a clearer final drink, strain the chilled syrup through a fine mesh sieve to remove the zest and any solids.

Assembly

Measure 1/3 cup (80 ml) of the chilled orange syrup into a 275 ml bottle or a glass. Add 1 cup (240 ml) of cold sparkling water. Gently stir or invert briefly to combine — do not vigorously shake to preserve carbonation. Adjust sweetness to taste: add more sparkling water for a lighter drink or more syrup for sweeter, more orange-forward Aranciata.

Add 4 ice cubes to a serving glass (if using a bottle, chill instead of adding ice). Garnish with an orange slice or twist on the rim. Serve immediately, cold and sparkling.
