    Cook aromatics

    Heat a large skillet over medium heat. Add olive oil. When shimmering, add diced yellow onion, red and green bell peppers, and a pinch of salt. Sauté, stirring occasionally, until onions are translucent and peppers soften, about 5–6 minutes. Add minced jalapeño and garlic and cook 30–45 seconds until fragrant.

    Brown the beef

    Increase heat to medium-high. Push vegetables to the side and add ground beef to the skillet. Break it up with a spatula and cook until no pink remains, about 6–8 minutes. Drain excess fat if there is more than a tablespoon.

    Season beef

    Return skillet to medium heat if needed. Sprinkle in ground cumin, chili powder, salt, and black pepper. Stir to combine thoroughly and cook another 1–2 minutes to bloom the spices. Taste and adjust seasoning if necessary. Remove from heat and set aside.

Creamy & Salsa Layer

    While the beef finishes, soften the cream cheese if not already softened: microwave in 10-second bursts or let sit at room temperature. In a medium bowl, beat the cream cheese until smooth using a spatula or electric mixer. Stir in sour cream until uniform. Fold in the cream-style salsa, sliced green onions, chopped cilantro, and lime juice. Season lightly with salt to taste. Mix until combined.

    Assemble base layers

    Preheat oven to 375°F (190°C). Spread the creamy salsa mixture evenly in an ovenproof shallow baking dish (a 9-inch round or 9x6-inch oval works well), creating a smooth layer about 1/2–3/4 inch thick. Spoon the warm seasoned beef-and-vegetable mixture evenly over the creamy layer and gently spread to cover it completely.

Cheese Topping & Bake

    Top with cheese

    Evenly sprinkle the 2 cups shredded Tex-Mex cheese over the beef layer. If using, scatter crumbled queso fresco or cotija sparingly on top.

    Bake to melt

    Place the assembled dip in the preheated oven and bake for 12–15 minutes, or until the cheese is fully melted and bubbling at the edges. For a browned top, switch oven to broil for 1–2 minutes while watching closely to avoid burning.

    Finish and garnish

    Remove from oven and let rest 3–5 minutes. Sprinkle sliced green onions and cilantro leaves over the hot cheese. Add pickled jalapeños on top if using. Taste and adjust any final salt or lime if desired.

To Serve

    Serve the Nacho Delight Dip hot with large sturdy nacho chips on the side for scooping. Recommend providing extra napkins; this dip is best enjoyed fresh and warm. Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in a 350°F (175°C) oven until warmed through.
