Meat Sauce

Add garlic
Add minced garlic and cook 30–45 seconds until fragrant, stirring to avoid burning.

Brown meats
Increase heat to medium-high. Add ground beef and Italian sausage, breaking up with a spoon. Cook 6–8 minutes until no pink remains and browned bits form. Drain excess fat if needed, leaving about 1 tablespoon for flavor.

Build the sauce
Stir in tomato paste and cook 1–2 minutes to caramelize. Add crushed tomatoes, diced tomatoes, and beef broth (or water). Stir to combine.

Season and simmer
Add oregano, basil, thyme, sugar, salt, black pepper, and red pepper flakes. Bring to a gentle simmer, reduce heat to low, and simmer uncovered 20–25 minutes, stirring occasionally, until sauce thickens slightly. Taste and adjust salt/pepper.

Preheat oven
Preheat oven to 375°F (190°C). If using regular lasagna noodles, cook them in salted boiling water until al dente according to package directions, drain and lay on a lightly oiled tray to prevent sticking.

Layer lasagna
Spread 1 cup of meat sauce across the bottom of a 9x13-inch baking dish. Arrange 3–4 lasagna noodles in a single layer over the sauce (depending on noodle size). Spread one third of the ricotta mixture (about 2/3 cup) over the noodles in an even layer. Spoon about 1 cup of meat sauce over the ricotta, then sprinkle about 1 to 1 1/3 cups shredded mozzarella (and a few tablespoons provolone if using). Repeat two more times to make three total noodle layers, finishing with a final layer of noodles, remaining meat sauce, remaining mozzarella and provolone, and the 1/4 cup grated Parmesan on top.

Finish baking uncovered
Remove foil and bake an additional 15–20 minutes until cheese is bubbly and golden and internal temperature reaches about 165°F (74°C). If you want a more browned top, broil 2–3 minutes while watching closely.

Rest and serve
Let lasagna rest at least 10–15 minutes before slicing to set. Garnish with fresh basil or parsley. Serve hot.
