Preheat your oven to 475°F (245°C). If using a pizza stone, place it on the middle rack while preheating. If using a baking sheet, lightly oil it or line with parchment.

prepare dough
Lightly flour a work surface with the all-purpose flour. Stretch or roll the pizza dough into a 12-inch round (or desired shape) about 1/4-inch thick. Transfer the dough to a lightly oiled baking sheet or a pizza peel dusted with flour/cornmeal if using a stone. Brush the outer 1/2-inch edge lightly with 1 tablespoon olive oil to help browning.

Spread the 3 tablespoons of BBQ sauce evenly over the dough, leaving the oiled rim exposed for the crust. Be sure not to overload the sauce to avoid a soggy center.

Sprinkle 1.5 cups shredded mozzarella evenly over the sauced surface. If using, scatter 1/2 cup shredded smoked gouda or cheddar on top of the mozzarella for a smoky flavor.

If your chicken is not seasoned, toss the 2 cups cooked chicken with 1 tablespoon of BBQ sauce (reserved from total if desired), 1/4 tsp salt, and 1/4 tsp black pepper so it’s evenly coated and flavorful.

Distribute the coated chicken evenly over the cheese. Scatter the thinly sliced red bell pepper and red onion across the pizza. If you like heat, sprinkle 1/4 tsp crushed red pepper flakes over the toppings.

Bake in the preheated oven on the pizza stone or baking sheet for 10–14 minutes, or until the crust is golden and cheese is melted and bubbly. Rotate the pizza halfway through baking for even browning.

Remove pizza from oven and let rest 2–3 minutes. Sprinkle chopped fresh cilantro over the top. Slice and serve warm.
