Proof yeast
Combine warm water (about 105–115°F / 40–46°C), instant dry yeast, and sugar in a small bowl. Stir and let sit 5 minutes until slightly foamy. If using true instant yeast you may only wait 2–3 minutes to ensure it’s active.

Mix dough
In a medium bowl whisk together flour and salt. Make a well in the center and pour in the foamed yeast mixture and olive oil. Stir with a spoon until a shaggy dough forms.

Knead
Turn dough onto a lightly floured surface and knead for 4–6 minutes until smooth and slightly elastic. If dough is sticky, sprinkle up to 1 tbs additional flour, a little at a time.

Rest
Form dough into a ball, place in a lightly oiled small bowl, cover with plastic wrap or a damp towel, and let rest 30–45 minutes at room temperature until it puffs slightly (not necessarily doubling).

Preheat and prepare pan
Place a pizza stone or inverted baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. If you don’t have a stone, use a lightly oiled small baking pan (6–7 inch round).

Shape crust
After dough has rested, gently press and stretch dough on a lightly floured surface into a 6-inch round, about 1/4–3/8 inch thick. For the cat ears, pinch two small triangular points at the top edge of the circle to form ear shapes; press seams to secure so they hold shape while baking.

Sauce and cheese
Place the shaped dough on a piece of parchment paper (or a floured peel). Spoon the tomato pizza sauce onto the center and spread to leave a 1/2-inch uncovered rim. Sprinkle shredded mozzarella evenly over the sauce, then dust the parmesan over the mozzarella.

Prepare decorative pieces
Slice black olives in half for eye shapes and reserve small rounds for pupils. Cut a small triangle from the red bell pepper for the nose and very thin strips for the inner ear color. Fold or trim pepperoni/salami slices into small rounded pads for cheek areas; cut thin strips for whiskers or use mini pepperoni slices cut into thin slivers. If using basil, tear small pieces for accents.

Arrange face
Before baking, place two halved black olives near the upper center to form the eyes. Use smaller olive rounds or punched centers to create pupils and press gently into the mozzarella so they adhere. Position the red pepper triangle below the eyes for the nose. Arrange two pepperoni/salami pads on either side of the nose for cheeks. Tuck thin pepperoni strips outward from each cheek pad to form whiskers. Add a small red pepper strip inside each triangular ear for inner-ear color and press to adhere.

Finish and season
Remove pizza from oven and let rest 2 minutes. If desired, sprinkle dried oregano and a pinch of crushed red pepper over the top for flavor. Add basil leaves for a fresh accent. Let cool slightly, then serve.
