    Prep and dry

    Pat the wings very dry with paper towels. Removing surface moisture is essential to get crispy skin.

    Apply baking powder & seasoning

    In a large bowl, toss the wings with 2 tablespoons baking powder, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until evenly coated. The baking powder helps crisp the skin during roasting.

    Rest

    Place the coated wings on a wire rack set over a rimmed baking sheet and refrigerate, uncovered, for 30 minutes to 1 hour if time allows. This further dries the skin (optional but recommended).

    Preheat oven

    Preheat the oven to 425°F (220°C). Position a rack in the upper-middle of the oven. Line a rimmed baking sheet with foil and set a wire rack on top; spray or rub rack lightly with oil to prevent sticking.

    Oil and arrange

    If you skipped the fridge rest, toss the wings with 2 tablespoons neutral oil to evenly coat. Arrange wings in a single layer on the rack with space between pieces for air circulation.

    Roast

    Roast for 20 minutes, then flip each wing and continue roasting for another 15–25 minutes until the skin is deeply golden-brown and crisp and an instant-read thermometer reads 165°F (74°C) at the thickest part. Total cook time will be about 35–45 minutes depending on wing size and oven.

Buffalo Sauce

    Melt butter

    While the wings roast (during the last 10 minutes), melt 4 tablespoons unsalted butter in a small saucepan over low heat or in a microwave-safe bowl in short bursts. Do not let it brown.

    Combine sauce

    Add 1 cup hot sauce, 1 teaspoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon light brown sugar (or honey), 1 teaspoon smoked paprika (optional), and 1/4 teaspoon black pepper to the melted butter. Whisk until fully combined and slightly warm. Taste and adjust heat or sweetness as desired.

    Toss wings in sauce

    When wings are fully cooked and crisp, transfer them to a large mixing bowl. Pour the warm buffalo sauce over the wings and toss gently but thoroughly to coat each piece. Work in batches if necessary to keep the wings crisp.

    Arrange sauced wings on a platter with celery and carrot sticks. Serve immediately with 1/2 cup blue cheese dressing or ranch for dipping.
